INGREDIENTS:

Mushrooms, Sliced

Salt

Onions, Thinly Sliced

New Baby Potatoes

Vine Baby Tomatoes, Thinly Sliced

Irish Mature Cheddar Cheese, Grated

3 x Free Range Eggs

Cayenne Pepper

Dried Mixed Herbs

Olive Oil

Basil Pesto

Rocket Leaves to garnish

METHOD:

​

Fry the mushrooms in olive oil and add salt to bring out the juices.  Then set to one side.

​

Fry the onions until golden brown (do not blacken).

​

Boil the new baby potatoes and slice thinly.

​

Mix the 3 free range eggs and add in the mushrooms, onions, baby potatoes, tomatoes, cheese, cayenne pepper & mixed herbs.

​

Add olive oil to the frying pan and fry over a medium heat until browned underneat.  Then grill the top of it until again golden brown.

​

Garnish with rocket leaves.
